Here's the latest... It's getting easier to pack lunch every day, and it's only Day 3. Mostly because I spent an embarrassing number of hours on Saturday developing and completing a spreadsheet for the week's meals and groceries. Before you judge, you should know I have switched the meals around in several ways since I wrote it, so I may not be as rigid as you think. Ok, now go ahead and judge all you want.
Top Right: Tuna salad with celery, sweet pickle relish, hard boiled egg, canola oil mayo, mustard, and CHIVES! (Just thought of adding chives because they were leftovers in the fridge from a recipe, and they are deeelicious in this!)
Bottom Right: tangerine and grapes
Bottom Left: dried apricots, prunes, peanut butter, and a Ghirardelli Dark and Sea Salt Caramel Squares.
I'm also including a whole wheat pita on top in the box.

Saimi, I know. But you'd be surprised how satisfying it is, and how much food it is! Actually, a big concern when I pack lunches like this is that I may not be able to finish chewing all those fruits and veggies in the 20 minutes that I end up getting to eat during my lunch time at school. And, I'm enjoying it much more than I expected.

ReplyDeleteThat looks like a great system. I have chives just outside the kitchen door, and we use TONS of them in tuna salad. It's just the best addition ever.
